Cashew Chicken for One
Equipment

Ingredients
Sauce
- 2 tbsp Low salt Soy Sauce
- 2 tbsp Honey
- 1 tsp Olive Oil
- 1/4 tsp Ginger grated (or use 1/8 tsp ground ginger)
- 1 tbsp Water
For the Cashew Chicken
- 1/2 tbsp Olive Oil
- 170 gr Boneless Skinless Chicken Breast cut into cubes (you can also use boneless skinless thighs)
- Pinch Salt
- Pinch Black Pepper
- 1/2 cup Onion chopped thickly
- 1/2 cup Broccoli Florets
- 1 clove Garlic minced
- 1/4 cup Cashews unsalted
Instructions
To make the Sauce
- In a small bowl, whisk together the soy sauce, honey, olive oil, ginger, and water. Set aside.
To make Cashew Chicken
- Season the chicken with salt and pepper. Heat the oil in a medium-sized skillet (10-inch or similar size is recommended) over medium-high heat. Add the chicken and sauté until cooked through, 4-5 minutes.
- In the sameskillet, add the chopped onions, broccoli, and garlic. Cook, stirringoccasionally for one minute, keeping them crisp-tender.
- Add the cashews to the skillet and pour in the sauce. Cook until the mixture comes to a light boil. Reduce heat to low and simmer for 3 minutes.
- Serve with rice(optional).
