  • Small mixing bowl

  • 2 tbsp Low salt Soy Sauce
  • 2 tbsp Honey
  • 1 tsp Olive Oil
  • 1/4 tsp Ginger grated (or use 1/8 tsp ground ginger)
  • 1 tbsp Water

For the Cashew Chicken

  • 1/2 tbsp Olive Oil
  • 170 gr Boneless Skinless Chicken Breast cut into cubes (you can also use boneless skinless thighs)
  • Pinch Salt
  • Pinch Black Pepper
  • 1/2 cup Onion chopped thickly
  • 1/2 cup Broccoli Florets
  • 1 clove Garlic minced
  • 1/4 cup Cashews unsalted


To make the Sauce

  • In a small bowl, whisk together the soy sauce, honey, olive oil, ginger, and water. Set aside.

To make Cashew Chicken

  • Season the chicken with salt and pepper. Heat the oil in a medium-sized skillet (10-inch or similar size is recommended) over medium-high heat. Add the chicken and sauté until cooked through, 4-5 minutes.

  • In the sameskillet, add the chopped onions, broccoli, and garlic. Cook, stirringoccasionally for one minute, keeping them crisp-tender.
  • Add the cashews to the skillet and pour in the sauce. Cook until the mixture comes to a light boil. Reduce heat to low and simmer for 3 minutes.
  • Serve with rice(optional).
