Pie Maker 2 Minute Noodle Vegie Frittata

- Pie Maker or Muffin Tray
- Mixing Bowl
- Scissors
Ingredients
- 2 x 72 g Packets Chicken flavoured 2 Minute Noodles
- 6 Eggs
- 1 Carrot large coarsley grated
- 1 Green Onion thinly sliced
- 1 1/2 cups Peas, corn & capsicum frozen mix
- 3/4 cup Tasty Cheese grated
Instructions
- Cook noodles, following packet directions,reserving seasoning sachets. Drain well. Set aside for 15 minutes to cool.Using scissors, cut noodles into 12cm lengths.
- Lightly beat eggs in a large bowl. Add noodles, carrot, onion, vegetable mix, cheese and 1 seasoning sachet (discardremaining sachet). Stir until well combined.
- Preheat pie maker
- Spoon 1/4 cup of mixture into each hole. Close lid. Cook for 10 minutes or until golden and set.
- Transfer to a wire rack to cool or transfer to overn to keep warm
- Repeat with remaining noodle mixture to make 12 frittatas.
- Serve.
