Mashed Potato Cups

- non-stick muffin tray
- sharp knife
- cutting board
- tablespoon
- large bowl
- grater
Ingredients
- 160 g Mashed potatoes
- 35 g Cheddar Cheese grated
- 1 Egg (large) lightly beaten
- 2 g Chives chopped
- 1 pinch Nutmeg
- 1 tsp Butter
- 1 tbsp Breadcrumbs
Instructions
- Preheat oven to 160c fan
- Grease muffin tin and sprinkle with breadcrumbs
- Combine potatoes, cheese, egg, chives and nutmeg.
- Spoon into muffin tin and bake for 20 minutes or until golden.
Notes
This recipe can be prepared for dinner with mashed potatoes from lunch. You can also use day old mashed potatoes.
** Dried chives would be suitable.
