Chris’ Yeast Pancake
Servings: 10 pancakes
Ingredients
- 250 grams Strong white flour bread flour is best
- 15 grams fresh yeast or 5-7 grams of Dried Yeast
- 1 tsp salt
- 250 ml warm milk
- 250 ml warm water
- 1/4 tsp bicarbonate of soda
- 4 tbsp cold water
- 1 egg white lighly beaten
Instructions
Making the mix
- Start with a large mixing bowl
- combine the flour, salt and yeast
- mix the water and milk together
- pour the milk water mixture into the bowl,
- beat vigorously (feel free to use an electic mixer) until you have a smooth batter
Rising
- Cover the mix and leave in a warm location to rise
- let rise until the risen mixture looks ready to drop (this can take 30-45 mins longer if cooler)
Prepare the grill
- You will need a heavy based frypan, griddle or hot BBQ to cook these, so set these to heat
When ready to cook
- disolve the bicarbonate of soda in the 4 tbsp of water.
- beat the bicarbonate mix into the batter
- the fold the beaten egg white into the mix
- The mix should be the consistancy of thick pouring cream. If too thick add a little water (not too much)
Cooking
- Cook the pancakes as you would any other pancake, but be careful the pan is not too hot – this is a bit of trial and error for you
- the pancakles will bubble on top when they set flip them over and let cook until slighly brown.
