Apricot and Coconut Slice

Equipment

  • Lamington Tray
  • Mixing Bowl

Ingredients

Base

  • 250 gm Pkt plain sweet biscuits crumbed  
  • 1 cup dried apricots finely chopped
  • 1 1/2 cups desiccated coconut
  • 395 gms can sweetened condensed milk
  • 125 gms butter

Topping

  • 1 1/4 cups milk chocolate melts

Instructions

Base

  • Line base of 18cm x 28cm lamington tray with baking paper.
  • Combine biscuit crumbs, apricots and coconut in a medium bowl.  
  • Place sweetened condensed milk and butter in a medium saucepan.
  • Stir over medium heat until butter is melted and ingredients combined.  
  • Pour over dry ingredients and mix thoroughly.  
  • Press mixture into tray and refrigerate until set.

Topping

  •  Place melted chocolate melts over slice,
  • Allow to set.
  • Cut into squares.
