Instructions
To make the Sauce
In a small bowl, whisk together the soy sauce, honey, olive oil, ginger, and water. Set aside.
To make Cashew Chicken
Season the chicken with salt and pepper. Heat the oil in a medium-sized skillet (10-inch or similar size is recommended) over medium-high heat. Add the chicken and sauté until cooked through, 4-5 minutes.
In the sameskillet, add the chopped onions, broccoli, and garlic. Cook, stirringoccasionally for one minute, keeping them crisp-tender.
Add the cashews to the skillet and pour in the sauce. Cook until the mixture comes to a light boil. Reduce heat to low and simmer for 3 minutes.
