3 Ingredient Fruitcake

Equipment

  • 9" square tin or 23cm round tin
  • Mixing Bowl

Ingredients

  • 1 Kg Mixed Fruit
  • 2 Cups Iced Coffee (or black coffee or orange juice or apple juice)
  • 2 Cups SR Flour

Instructions

  • Soak fruit in coffee overnight
  • Stir flour into fruit and liquid
  • Preheat oven to 180 degrees
  • Line 9" square tin or 23cm round tin
  • Put in oven for 2 hours (put brown paper over cake for first hour)(check after 1½ hours it may be cooked)
