Mushroom Soup for 2

This easy homemade Mushroom Soup is rich and savoury filled with two types of fresh mushrooms and onions seasoned with thyme, bay leaf, and soy sauce. Too finish it is topped with shredded Parmesan and fresh cracked black pepper.

Ingredients

  • 1 tsp Oil
  • 1 Onion white large
  • 230 gr Baby Portobello Mushrooms sliced
  • 230 gr White Button Mushrooms sliced
  • 1 tbsp Thyme leaves dried
  • 1 cup Chicken Broth
  • 1 tbsp Flour
  • 1 cup Milk
  • 1 Bay Leaf dried
  • 1/2 tsp Soy Sauce
  • 1/2 tsp Salt
  • Black Pepper freshly ground
  • 1/4 cup Parmesan shredded

Instructions

  • Dice the onion on a cutting board. •
  • In a large saucepan, over medium heat, add the cooking oil and diced onions and cook about 5 - 7minutes. •
  • Add the mushrooms and cook 5 minutes uncovered, stirring occasionally. •
  • Sprinkle in the thyme and continue to cook, about 10 minutes. •
